There are none. The bar at the bottom of the screen says so, and asks you for nothing.

1. This site uses no cookies
That is not a turn of phrase. It is a technical description you can check: no cookies, first party or third party, technical or profiling; nothing written to your device, in any form; no requests to third-party domains, because the typeface is hosted on this same domain; no analytics, neither hosted elsewhere nor hosted here. The full list of what is not processed is in the privacy policy, which is the document that has to be accurate.
Check it yourself: open your browser’s developer tools, the Network or Application tab, and reload the page. You will find no cookies and no requests to any host other than this one.
2. The bar at the bottom of the screen
You have probably seen it. It sits where a cookie banner sits, because that is where your eye has been trained to look for this question, and what it does there is answer it: no cookies, nothing stored, no third party requests. Then it goes away.
It has no accept button, because there is nothing to accept. A consent form with no subject matter is not caution, it is theatre, and it teaches people that their agreement was needed when it was not.
It also stores nothing, not even the fact that you closed it. That is the only version of this notice that is not self-refuting: a message whose whole claim is that nothing about you is kept cannot keep something about you in order to stop repeating itself. It is held in memory for as long as the page is open, so it stays closed while you move around the site and comes back if you reload.
3. Why you were never asked to consent
Because there would be nothing to consent to, and asking for consent that is not needed is itself improper.
The Italian supervisory authority’s cookie guidelines of 10 June 2021 state that where only technical cookies are involved, the information may be given in the general privacy notice “senza l’esigenza di apporre specifici banner da rimuovere a cura dell’utente” — without the need to display specific banners for the user to dismiss, in an unofficial translation, the instrument having no official English text. Here there are not even technical cookies.
A banner on a site that writes nothing to your device would not be caution: it would be a consent form with no subject matter, training people to click without reading.
4. What does happen when you visit
The server hosting the site records the requests it receives, as any web server does. That is not a cookie and does not touch your device: these are server-side logs, kept for the period attached to the active Railway plan. The detail is in the privacy policy.
5. If this ever changes
If analytics, embedded third-party content, or any tool that writes to your device were introduced, this page would be rewritten and, where the law requires it, a consent request would appear before that tool was activated. Not earlier, not later.
